Mint Rice – Lunchbox Recipe:
If you are looking for a quick fix recipe, then mint rice would definitely serve the purpose. It tastes good with sides like potato stir fry, yam stir fry and raw banana stir fry.
This is one of my favourite recipe that I learnt from my mom. It tastes so good and easy to prepare too, that it has made way into my regular preparations.
Experimenting with photography, I took a new pic of the mint rice that I made today. My camera ran out of battery and I ended up taking the shot from my mobile – I was very happy with the way it turned out. So I’m updating this post(2015) with the new pic( mint rice / pudina rice 2019)
1/2 bunch of mint leaves
1/2 inch ginger
1 inch tamarind
3-4 green chillies
4-5 cashew nuts
1/2 medium sized onion
2 red chillies
3 tbl spn oil/ Ghee
salt to taste
1. Blend mint leaves, ginger, green chillies, tamarind together in a mixer to a fine paste by adding little water. Keep aside
2. Heat oil in a pan and add the cashew nuts. As the cashew nuts turn brown, add red chillies and onion. Saute till the onion becomes golden brown.
3. Now add the blended mint paste and saute till oil separates from sides of the pan. Mint rice mix is now ready. Stir it with steamed rice for lunch.
