Sambar is a common traditional South Indian dish that’s frequently prepared with vegetables like drumstick, carrot, potato,bottle guard ladies finger, mango, beans, bringal etc., a wide variety, either with the combination of different vegetables or using a specific vegetable.
Mutton Sambar is quiet unique and delicious in taste but its not prepared so frequently as compared with the vegetable sambar. For sambar lovers, recipe is below
250gms- mutton with bones
1 & 1/2 drumstick ( cut into 3-4 inch pieces)
6-8 tabl spn tur dal
10-15 pods sambar onion (chopped)
2 big sized tomato (chopped)
1 tspn chilly powder
1 tbl spn coriander powder
1 tbl spn sambar powder
1/2 tsp turmeric powder
1 tsp ginger garlic paste
2 red chillies
1 green chilly
1/2 tsp mustard seed
1/2 tsp cummin seeds
3 tbl spn oil
A pinch of hinge
Salt to taste
1. Pressure cook dhal with 1/4tsp turmeric powder, a pinch of hinge, 1/4 tsp cummin seeds, 2 garlic pods, few drops of oil and salt
2. Pressure cook mutton with 1/2 tsp pepper powder, 1’4 tsp cummin poder, 1/4 turmeric powder, 1/2 tspn ginger garlic paste and salt
1. Heat 3 table spn oil in pan and add mustard seeds to splutter. Then add cummin seeds, red chillies, green chilly, curry leaves, chopped onion and saute till the onion becomes golden brown . Now add ginger garlic paste and saute till the raw smell goes off.
2. Now add tomato and saute till it becomes soft. Then add chilly powder, coriander powder, turmeric powder, sambar powder , drumstick, mutton and some water for the mutton to get cooked with the spices for 5 mins.
3. Now add dhal and water to proper gravy consistency and cook tight lid for 15 mins in medium flame.
4. Once you get nice bubble from the gravy, switch off the flame
5. Top it with coriander leaves and serve hot
